One Pot Rice Meal | Plant Based Diet | Vegan Rice Recipe:

This is a super healthy and nutritious rice recipe and incredibly easy to make. Its loaded with with vegetables and is great for vegan and vegetarian diet. Enjoy!


3 Tablespoons of Oil
1 Medium Onion (150g approx.)
1 Medium Potato (200g approx.)
Green Beans (150g)
1 Medium Carrot (150g)
2 Bell Pepper (200g EACH) (Any Color)
3 Garlic Cloves
1 Inch Ginger
1/2 Cup Frozen Lima Beans OR Edamame OR Peas OR Any Beans of choice

1 Cup Tomato Puree OR Spaghetti sauce OR 4 Medium Tomatoes (blended)
1/2 Teaspoon Turmeric Powder
1 Teaspoon Cumin Powder
1/2 teaspoon Cayenne Pepper (OPTIONAL) OR Indian Chilli Powder
1 Cup Rice (Washed)
1+ 1/2 Cups Water OR Vegetable Stock OR Chicken Stock
Salt to Taste
Juice of 1/2 Lime OR Lemon
1/2 Cup Chopped Parsley OR Cilantro
