Here are some simple, healthy, vegan meals I ate today! RECIPES:
Breakfast:
– 1.5-2 cups of oatmeal
– Add water until to covers the surface
– Microwave for 1.5-2 minutes, or until water has been absorbed
– Add your favorite nut milk (I used rice milk) + a banana
– Microwave for another 30 seconds
– Add raisins + 1 tbsp. of chia seeds + 2 tbsp. almond butter
– Top with cinnamon, cacao powder, and agave

Lunch
– Add 1 cup of rice to a rice cooker with 2 cups of water; cook for about 20-30 minutes
– Add coconut oil to a sauté pan
– Add diced onions and cook until translucent/slightly browned
– Add diced jalapeños & add water to prevent from burning
– Cook for another 2-3 minutes, then add washed and skinned garbanzo beans (the skins come off easily after washing)
– Cook until beans get browned/fried
– Add salt & pepper, chili flakes, cumin, garlic powder, and chili powder (I eyeball everything, so add as much as you feel necessary :))
– Once rice is cooked, add lime juice (I used 2 limes) and chopped cilantro (as much as you like)

Dinner:
– Add 1/2 cup of quinoa to a pot with 1 cup of water
– Bring to a boil
– When boiling, reduce heat to low, cover pot, and cook until liquid is absorbed (about 15 minutes)
– Fluff with a fork
– Add cooked quinoa to your choice of greens (I used kale!)
– I like to add tomato slices, avocado, and lime, but you can add whatever you want!
– Top with balsamic vinegar

    You can be pretty and smart, try it.
    You are influencing young girls who think being dumb is the way to be successful, this doesn't help the smart girls who want to get ahead in life but get held back because people expect them to act dump. Watch Mad Men thats the way it used to be…we haven't moved on enough.
